Heavy smoked meat needs something fresh next to it. This salad takes 10 minutes and gets better as it sits.

What You’ll Need:

  • 3 large cucumbers, thinly sliced
  • ½ red onion, thinly sliced
  • ½ cup white vinegar
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh dill (optional)

How to Make It:

  1. Whisk the vinegar, water, sugar, salt, and pepper until the sugar dissolves.
  2. Toss in the cucumbers, onion, and dill.
  3. Chill at least 30 minutes and up to 24 hours.

Pro Tips:

  • For a creamy version, swap the vinegar mix for ½ cup sour cream, 2 tablespoons vinegar, and dill.
  • Add a few sliced jalapeños for heat.
  • Serve it with a slotted spoon so the dressing doesn’t flood the plate.
