This Homemade Blueberry Pie Is Summer on a Plate

There are certain desserts that just feel like summer, and blueberry pie is right at the top of that list. Maybe it’s because fresh blueberries seem to show up all at once, or maybe it’s because a warm slice with a scoop of vanilla ice cream has a way of making everybody slow down for a minute. Either way, this is one of those pies that’s been making appearances at family cookouts, holiday tables, and Sunday dinners for generations.

The beauty of blueberry pie is that it doesn’t need a long list of fancy ingredients. A handful of pantry staples and a pile of juicy blueberries do most of the work. The berries bake down into a thick, sweet filling with just a touch of cinnamon, while the buttery crust turns golden and flaky around the edges.

Start by preheating your oven to 375 degrees. Position the oven rack on the lowest level so the bottom crust has a chance to bake up nice and crisp instead of turning soft.

In a large bowl, combine ¾ cup of white sugar, 3 tablespoons of cornstarch, ½ teaspoon of ground cinnamon, and ¼ teaspoon of salt. Give everything a quick stir, then pour the mixture over 4 cups of fresh blueberries. Gently toss until every berry is coated. If fresh blueberries aren’t available, thawed frozen blueberries work just fine too. Just be sure to drain off any excess liquid before mixing them with the dry ingredients.

Fit one pie crust into a 9-inch pie plate, letting it settle naturally into the corners without stretching the dough. Pour in the blueberry filling, spreading it into an even layer. Dot the top with 1 tablespoon of butter, breaking it into small pieces so it melts evenly as the pie bakes.

Now for the fun part. Roll out the second crust and slice it into strips about ½ to ¾ inch wide. Lay two long strips across the center in an X, then continue weaving the remaining strips over and under to create a classic lattice top. It looks fancy, but after the first couple of strips, it starts making sense. Once the lattice is finished, fold the ends underneath the bottom crust and crimp the edges however you like.

Place the pie on the lowest oven rack and bake for about 50 minutes. You’ll know it’s ready when the crust is beautifully golden and the blueberry filling is bubbling up through the lattice. Those bubbling juices are the sign that the filling has thickened properly.

After baking, let the pie cool before slicing. It can be tempting to dig in right away, but giving it time to rest allows the filling to finish setting so every slice holds together instead of running across the plate.

If you want to brighten the flavor even more, a squeeze of fresh lemon juice mixed into the blueberries before baking adds a little tang that pairs perfectly with the sweetness of the fruit. It’s a small addition that lets the blueberry flavor shine without overpowering it.

Blueberry pie will keep covered at room temperature for about two days. If you’re planning to enjoy it longer than that, refrigerate it for up to five days. You can also freeze a fully baked pie for up to six months by wrapping it tightly in plastic wrap followed by aluminum foil.

Serve it warm, serve it chilled, top it with vanilla ice cream, or add a dollop of whipped cream. However you slice it, homemade blueberry pie has a way of disappearing a lot faster than you expect.
