These Baked Beans Are Sweet, Smoky, and Gone in Minutes

Baked beans are one of those dishes that people either make from scratch or just open a can and call it a day. And look, canned beans are fine. They’ll do the job. But these baked beans? These are the ones people remember. These are the ones that disappear before the ribs are even gone.

They’re sweet but not candy-sweet, smoky from bacon and a touch of liquid smoke, and have just enough tang to balance everything out. They’re thick, rich, and the kind of side dish that could honestly be a meal on its own with some cornbread.

What You’ll Need:

  • 4 cans (15 oz each) navy beans or pork and beans, drained and rinsed
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup ketchup
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 2 tablespoons yellow mustard
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional)

How to Make It:

Cook the Bacon: Preheat your oven to 325°F.

In a large oven-safe pot or Dutch oven, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon with a slotted spoon and set it aside, but leave the bacon fat in the pot.

Sauté the Aromatics: Add the diced onion to the bacon fat and cook until it’s soft and translucent, about 5 minutes. Add the garlic and cook for another minute until it’s fragrant.

Build the Sauce: Add the ketchup, brown sugar, molasses, vinegar, mustard, Worcestershire, liquid smoke, paprika, pepper, and cayenne. Stir it all together and let it simmer for a couple of minutes.

Add the Beans: Stir in the drained beans and the cooked bacon. Mix everything together until the beans are well coated with the sauce.

Bake It: Cover the pot and put it in the oven. Bake for 45 minutes, then uncover and bake for another 30-45 minutes, stirring occasionally, until the sauce is thick and bubbly and has reduced to a nice, clingy consistency.

Serve: Let the beans cool for a few minutes before serving. They’ll thicken up even more as they sit.

Pro Tips:

  • Add more bacon: Because why not? You can crumble extra bacon on top before serving.
  • Grill or smoke them: If you’re already running the smoker or grill, put the beans in a cast iron skillet or foil pan and let them cook low and slow alongside your meat. They’ll pick up even more smoke flavor.
  • Make them ahead: These reheat beautifully. Make them the day before and just warm them up.
  • Customize: Add diced jalapeños, a splash of bourbon, or some diced bell pepper for extra flavor.

These are the baked beans that make people ask, “Wait, you made these?” They’re rich, they’re smoky, and they’re the perfect sweet-and-savory side for any cookout.
